Mashed potato pancakes

Here’s a winning reuse of leftovers that goes great with any gravy or cranberry sauce left from holiday dinners. Serve for breakfast or as a side at dinner.

This recipe is super easy. Preheat the oven to 250. Mix 2 cups leftover mashed potatoes, 1 egg and 1/4 cup flour. Salt and pepper to taste.

Mix that all together and then form pancakes with 1/4 cup of that dough and drop on a skillet greased with the fat of your choice.

Fry about 2-3 minutes per side. I like to use cast iron and that browns the pancakes nicely. This made about 6-8 pancakes, so if you are frying two rounds, keep the first batch warm in the oven.

This makes a great post-holiday or weekend breakfast. Bonus, you can freeze the extras for the next weekend!
