We’ve had incredible weather in the Pacific Northwest this fall. It has been bright, warm and even dry. I’ve been inspired to get out and do some fall hikes. Nothing goes better with hiking than trail mix.
There’s a local company called Sahale Snacks that has cornered the market on delicious nut and fruit mixes, taking them to the next level with zesty glazes. Having already spent way too much on these addictive snacks, I decided to give it a try in my home kitchen.
This is made with 1 cup mixed raw nuts, 1/4 cup pumpkin seeds, 2 dates, 2 dried sugared lemon slices from Trader Joe’s, 2 tablespoons of maple butter (sub with syrup), and 1 tablespoon of pomegranate molasses.
Preheat the oven to 350. While the maple butter and pomegranate molasses are heating in a saucepan on medium. Chop up the dates and lemon. Add the fruit and nuts to the syrupy mixture and sauté for 5 minutes. Then spread evenly on an oiled pan and bake for ten minutes.
Once it cools, your trail mix is ready to be bagged up. Enjoy the hike!
