I got an air fryer for Christmas and I’m super excited about it. It took some experimenting for me to get stuff right. I had a huge early mishap with fried chicken, but I got it right by the end of my time off. What I’ve found I like best about the Airfryer is how quickly I can make roasted stuff. I’ve tried green beans, Brussels sprouts and broccoli as well as a few different chicken things.
It’s amazing how easy the air fryer is. These green beans were tossed with a bit of olive oil, salt and pepper, than air fried at 370 for 10 minutes, then topped with Parmesan.
I made a second green bean dish, similar to dry fried Chinese string beans. These are tossed with garlic, ginger, scallion and a scant bit of chili oil, air fried at 370 for 10 minutes and then tossed with a bit of sesame oil, soy sauce and sesame seeds.
The air fryer was really handy for me today as it was the first day of my keto plans for the month of January. I was incredibly unorganized after a fantastic New Year’s Eve getaway (and a generous amount of champagne) and I still haven’t quite figured out how or what to eat with macro counting.
Fortunately, I was able to toss some drumsticks with herbes de Provence and air fry them to quickly make myself dinner with leftovers for tomorrow’s lunch. They were super good. I like my chicken crispy so I went 15 minutes per side at 400.
So day one of the keto experiment is in the bag. I did not eat nearly enough overall, but I have been eating more than I should for weeks, and I’ll get more organized this week. I ended up at 30 grams of carbs (mostly in the form of green beans and milk in my coffees), 43 grams of fat and 86 grams of protein. I think I had a little more fat than is accounted for because I had a cup of homemade broth and it’s hard to accurately record nutritionals for that. I’m hoping (sigh) it will get easier to navigate what to eat.
